Homemade shirashi don

All time favourite, fresh and simple, nutritious and healthy, this Rice bowl topped with raw fish has it all!

First thing first: you need to find a place where you can buy fresh fish to make sushi. Ask the seller for this specific use, they will show you the freshest fish.

For this bowl I used salmon and snow fish. I freezed it for 24 hours before eating it as recommended to get rid of eventual parasites.

After thawing it in the fridge, I sliced it and placed it back in the fridge.

I cooked 3 cups of rice (I use arborio or japanica rice) in my rice cooker and added when it was cooked half a cup of rice vinegar mixed with 2 spoons of sugar and 1 spoon of salt.

I blanched edamame and seasoned them with sesame oil and salt.

I served the fish in a bowl on top of the rice with some avocado and black sesame seeds.

Baked vegetables

Running out of time to prepare vegetables?

Just peel and cut the vegetables you want to eat, place it in a baking tray, add olive oil, balsamic vinegar, salt, pepper, herbs and in the oven 180°C for 30 minutes. Et voilà!

Here I used spring onions, carrots, fennel, dill weed and it was delicious.

Sourdough bread

I started a sourdough when I came back from summer holidays and got addicted to it. I bake bread now nearly every other day. Even the kids are in love with this subtle sour taste and ask me for fresh bread every day. I also make waffles, cakes and all sorts of baked goods with sourdough.

I want to share my experience with you!

For the dough you need to mix:

500 gr of flour (I like mixing different types of flour to make 500 gr, for example white flour, whole wheat flour, rye flour etc…)

300 ml of water, it is better to use tap water that you had left in an opened jar for chlorine to evaporate. Chlorine is not good for sourdough car the bacterias in the sourdough wouldn’t like it.

Small spoon of spoon depending on your taste (I usually use less because I like to spred salted butter on it)

Mix all those ingredients and knead the dough (machine or with your hands) for at least 10 minutes

Leave the dough for an hour or so.

After an hour add 150 gr of sourdough

Knead again for 10 minutes.

Leave the dough overnight. You will find it like this in the morning:

Turn on your oven to 220 °C.

When it is hot add a tin with water (to moist the bread) and you bread dough.

Cook it for at least 30 minutes until the crust is hard and the colour beautifully brown.

Took it off your tin and place it on a grill so that the bottom wouldn’t be too moist by the heat steam.

Salmon and cottage cheese waffles

What can be more delicious and enjoyable than eating savoury waffles for dinner!

My recipe is simple and ideal for non sweet waffles.

170 g sourdough (you can use a bag of year if you have no sourdough)

320 g flour

450 g milk

100 g butter

1 pinch of salt

1 spoon sugar

2 eggs

Mix all the ingredients. Leave it in the fridge overnight.

After cooking you can put on it different ingredients according to your taste. I usually place on the table ham, grated cheese, tomatoes, cottage cheese, smoked salmon, lemon. And each of us choose our favourite dressing.

Baked asparagus

If you want to illuminate a rainy Sunday of spring, think of this perfect recipe.

Peel some green asparagus.

Place it in a tray. Add olive oil and vinegar, salt and pepper.

Bake it in the oven for 20 minutes thermostat 189 degrees C (the time will depend on your oven).

I made a sauce with 2 squashed boiled eggs, 1 spoon of mayonnaise, 1 spoon of cream cheese mixed together.

Quick healthy destructured sushi in a bowl for an Asian dinner with a twist.

You will need

1 piece of fresh salmon (I try to buy organic one)

Some black sesame

Cooked Sushi rice

Seaweeds

Cucumber

Dillweed

Spicy paprika if you like

Edamame

Add some rice in the bowl. Top it up with sliced seaweed. Add sliced salmon, edamame, cucumber. You can add dillweed, spicy paprika and black sesame as you like. Eat with soy sauce or a sauce made with soy sauce, sesame oil and wasabi.

For this fresh and healthy recipe you will need:

Japanese sushi rice

2 pieces of fresh salmon (I try to buy organic one).

One ripe avocado

1 cucumber

Rice vinegar and sugar

Seaweeds

Cook 3 cups of Japanese sushi rice in a rice cooker. Don’t rinse the rice before cooking it.

When it is cooked add 5cl of vinegar mixed with one spoon of sugar to the rice. Mix it well and wait for it to cool it down.

Spread the rice on a seaweed sheet using a plastic foil so that the rice doesn’t stick to your fingers.

On the rice add some thin slices of raw salmon, cucumber, avocado in a line close and parallel to the side.

Roll it, slice the roll.

Put it in the fridge to serve cold with soy sauce.

Baked minute ratatouille

Summer is coming in Zürich, beautiful summer vegetables as well.

Let’s make a delicious ratatouille,delicious,light and easy!

You will need a few vegetables:

2 eggplants

3 zucchini

A few red bell peppers or peppers

Garlic

Cut all the vegetables.

Add olive oil, herbs, salt and pepper, balsamic vinegar reduction.

Bake for 40 minutes at 180 degrees C.

Salmon and rice sandwich

As I was out of bread and needed to prepare a packed sandwich for my daughters I had the idea of preparing those rice sandwiches.

You just need to cook some rice (ideally Japanese Sushi rice). You can then apply it on a sheet of seaweed. Use a plastic foil so that the rice won’t stick to your fingers.

Add some smocked salmon slices on top, cream cheese, dill weed.

Cover with an other sheet of seaweed.

Cut it in a triangular shape.
